Steps to make White bread loaf (toast):
- In a mixer bowl, combine bread flour, sugar, salt, dry yeast, milk and plain yogurt, leaving the unsalted butter for later use. ☝🏻Don’t let salt and dry yeast touch each other as this will kill (deactivate) the yeast!.
- Knead the dough at Speed 2 to gently mix the ingredients for 15-30 seconds..
- Gradually raise the speed to Speed 4, then knead for 5 mins..
- When the dough begins to form a ball, do a windowpane test. ☝🏻When you pull out the dough, the dough should be quite rough and elastic, and as it tears apart, the holes should have rough edges..
- Add in 30g butter. Continue kneading on Speed 4 for 10mins.
- Do a windowpane test again. ☝🏻This time, the dough should be easily stretched out without breaking it. If this happens, the dough is ready to rise..
- Take out the dough from the mixer bowl and shape it into a ball..
- Place it back into the mixer bowl, cover it with cloth or cling film and proof it for 1 hour (or until double in size) in room temperature..
- After 1 hour, take out the dough and check if it has properly proofed. ☝🏻Dip your finger with some flour and make a dent in the dough. If it doesn’t bounce back, this means it has properly proofed..
- Sprinkle some flour on the dough surface and pat the dough to release air bubbles..
- Divide the dough in half and work on one piece at a time..
- Flatten the dough and shape it into a rectangle..
- Fold each side into the centre..
- Rotate the folded dough vertically, gently flatten, and repeat the folding process..
- Let them rest for 15mins..
- Sprinkle some flour on the dough surface, roll the dough into a rectangular shape..
- On the longer side, fold each side into the centre. Roll the dough to flatten it..
- Starting from the short side, roll up the rectangular dough into a cylinder shape..
- Pinch to seal the seams and the ends..
- Repeat for the other piece..
- Place the loaves into a loaf pan. Let them proof for a 2nd time for 1 hour..
- After 1 hour, preheat the oven to 180°C. Brush the loaves with egg wash..
- Bake for 30-35 mins in a preheated oven at 180°C..
